Just about every day is taco day in this household. This week my hubs and I meal-prepped some fajitas and I decided to throw a twist on mine and make them breakfast tacos! Fajita Breakfast Tacos
2 Flour Tortillas
4 Egg Whites
1 Bell Pepper
1 Red Onion
1 Tablespoon melted butter (or olive oil)
Juice of half a lemon
1 tsp of cayenne pepper
1 tsp of smoked paprika
1 tsp of honey
Salt and pepper to taste
Slice the peppers, onions, and mushrooms. Mix all the marinade ingredients together and toss together with the peppers/onion/mushroom mixture. Pour out on a sheet pan and bake at 450 degrees F for 25-30 minutes until tender and cooked down.
While the peppers/onions/mushrooms cooks, cook the eggs whites with a pinch of salt.
Assemble cooked fajita mixtures with egg whites on the flour tortillas and top with cilantro.
These fajitas cook up great for meal prep and can be used as taco variations with other protein sources including shrimp, chicken, or TVP (textured vegetable protein) as desired.
